I want to know if I should stick to Intel processors or go for AMD processors for Windows and Linux hosting. What does everybody prefer?

Per core Intel win, where its gets more interesting is that AMD now offer cheap (relatively) many-core CPU which Intel don't have an direct competitors.
What you need to work out is whether faster few cores or many slower cores fit your needs better.
A single AMD board can have 32 or 48 core, which is a higher density of core than possible using Intel (where 24 physical is the max).
_________________| Intel | Amd |
Max Physical Cores__| 24 _| 48 _|
Max Logical Cores___| 48 _| 48 _|
Approx max Ghz*____| 75 _| 96 _|
* Very approximate: i'm using Intel: physical*1.25*2.5Ghz, Amd physical*2.0Ghz
Don't take the Approx number too seriously, but mean to show that prehaps at very high core density usage, more slower cores can win $ for $ against Intel 'better' cores.

Right now Intel is the way to go, AMD is certainly more cost effective however. Here is a site with tons of benchmarks between various CPU's
