What would be the ideal %age of the following Server Load Memory Used Swap Used Disk /dev/simfs (/)

For server load and ram, I'd say as long as you do not go over 80-90% it should be good. That is why you have 100% so you can use up to it I'd also love to hear what our experts have to say.

You generally don't want to use 100% of any resource, because performance will suffer considerably at that point. As for server load, that is not measured being measured in a percent. It is not like the CPU graph in Windows Task Manager. Server load is usually represented as a decimal number. Load represents CPU tasks waiting to complete. You have to compare the load value with the number of CPU cores to understand how the server is doing. A load of 0.0 means no load. If you have a load of 1.0 on a single CPU server, then you are using CPU resources but nothing is waiting/queued. If you have a single CPU core and the load is 1.1, then some tasks are going to see some delay. You generally want to see a load of less than 1.0. If you have multiple CPU cores, a load of up to the number of cores is acceptable without causing any queuing or delays. For example, if you have a quad core server and your load is 4.0 or less, then performance should be fine. If the load exceeds the number of CPU cores, then things will start being delayed. For example, if the load is 6.0 and you only have four CPU cores, you will notice things feel delayed and sluggish. If that happens too frequently, you need to buy more CPU cores or upgrade the existing CPUs to faster ones.
